Ingredients for Aloo-Bhindi curry
Bhindi – 1/2 kg
Potato – 3
Onion – 2
Garlic buds – 4-5
Cumin powder – 1 tsp
Red chili – one and a half tsp
Coriander Powder – 1 tsp
Amchur – 1 tsp
Turmeric – 1/2 tsp
Garam Masala – 1/2 tsp
Chili Flax – 2 tsp
Oil – 1/4 cup
Salt – as per taste
How to make Aloo-Bhindi curry
To make Aloo-Bhindi curry, first wash the Bhindi with water and wipe it with a cotton cloth. After this cut small pieces of bhindi. Now take potatoes and peel them and cut them into square pieces or as per your choice. After this wash the potatoes in water and take them out in a bowl and keep them aside. Now put oil in a pan and heat it on medium flame. When the oil becomes hot, put potatoes in it and fry them till they become crispy and golden. After this take out the fried potatoes in a plate.

Now cut the onion into long slices and cut the garlic into small pieces. After this, put them in the remaining oil in the pan and fry them till they become light brown. Fry the onion only so that its rawness ends. Now put bhindi in it and fry with onions for about 1 minute. Now slow down the flame of the gas and add fried potatoes to it, mix well and cook.
After this, add red chili powder, coriander powder, cumin powder, mango powder, chili flakes and salt according to taste and mix it well. Now let it cook for 2 to 3 minutes. Now cover the pan and let the vegetable cook for 5-6 minutes. During this, keep stirring the vegetable in between so that the vegetable does not stick to the pan. Cook the vegetable till the potatoes and bhindi become completely soft. In this way your delicious Aloo Bhindi is ready for dinner. Serve it with roti, paratha.
