Basmati Rice – 2 bowls
Coconut Milk – 750 ML
Cashew – 2 tbsp
Raisins – 1 tbsp
Ghee – 3 tbsp
Bay leaves – 2
Cinnamon – 2 pieces
Cloves – 3
Cardamom – 2
Cumin – 1 tsp
Sugar – 1 tsp
Green Coriander – cup
Salt – as per taste

How to make Coconut Milk Rice
Soak the rice in water for 15 minutes. Wash the rice after 15 minutes and drain its water. Do not wash the rice by mashing it too much, otherwise it will break. Heat the vessel in which the rice is to be cooked and add ghee to it. When the ghee becomes hot, then fry cashews and raisins one by one and keep them aside. Add cumin, clove, cardamom, bay leaf and cinnamon to the remaining ghee. After 1 minute, add coconut milk to it and let it cook on low flame.

When the milk starts boiling, then add rice to it and cover it on low flame and let it cook. Keep stirring the rice in between so that it does not stick to the pot. When the rice is cooked, then turn off the gas and add roasted cashews, raisins, sugar and green coriander on top and mix the rice well with light hands. If you like coconut, then grated raw coconut can also be added to the coconut milk rice. Serve this rice hot, so that it can get better taste.
