Dalma Recipe: Dalma, a traditional Odisha dish made by mixing pulses and vegetables

Dalma: Dalma is a popular dish eaten in Orissa. This dish is also offered as prasad in the Swami Jagannath temple. Whether it is a puja at home or a wedding ceremony, in Orissa this dish is prepared on every special occasion. Its specialty is that the pulses and vegetables present in it help in giving full nutrition to the body.

No special preparation is required to make it. It can be prepared by making it from seasonal vegetables present at home. Moong dal – 1 cup
Arhar Dal – 1 cup
Chana dal – 1 cup
French Beans – 100 grams
Tomato – 3 coarsely chopped
Onion – 1 cut into slices
Potato – cut into 2 thick pieces
Carrot – cut into 2 thick pieces
Eggplant – 1 cut into thick pieces
Ginger – 1 tbsp grated
Green chili – 3 finely chopped
Green Coriander – cup
Panchphoran – 1 tsp
Bay leaves – 2 whole
Cinnamon – 2 pieces
Black pepper – 4 grains
Cardamom – 2 whole
Cloves – 2 whole
Cumin – 2 tsp
Whole red chili – 2
Mustard oil – 3 tbsp
Turmeric – 1 tsp
Salt – as per taste

Dalma Recipe
Dry roast black pepper, cumin, cinnamon, cardamom and cloves in a pan for 2-3 minutes. When these spices cool down, then grind it in a mixer. Dry roast the tur, moong and chana dal on low flame. Put water in the cooker. Now put lentils, turmeric, salt, bay leaf, all vegetables and ginger-chili in it and apply 4 to 5 whistles. Heat oil in a pan.

Put a tempering of five more whole red chilies in it and turn off the gas. Add this tempering mixture to the dal. In the end, add ground powder of spices and green coriander and stir the dalma well. Feeding Dalma to children is beneficial. Due to this, they get the qualities of many vegetables and pulses in one dish.
