Ingredients for making Matka Pulao
Sprouted moong (boiled) – 1 cup
Cooked rice – 2 cups
Cumin – 1 tsp
Red chili powder – 1/2 tsp
Coriander Powder – 1 tsp
Turmeric – 1/4 tsp
Ginger grated – 1/2 tsp
Green onion chopped – 1/2 cup
Capsicum chopped – 1/4
Cloves – 3-4
Asafoetida – 1 pinch
Green chilies chopped – 2
Green coriander chopped – 2 tbsp
Oil – 1 tbsp
Salt – as per taste

Method of making Matka Pulao
To make Matka Pulao, first take the sprouted moong and clean it and boil it. After this, cook the rice in the cooker till 70 percent. Finely chop the white part of green onion and capsicum too. Now take an earthen pot and put oil in it and heat it. When the oil becomes hot, add cumin seeds and fry for a few seconds. When cumin seeds start crackling, add ginger, chopped green chilies, asafoetida and cloves and fry them in oil. After a few seconds, add finely chopped onion to this spice and fry it for 2 to 3 minutes. When the color of the onion becomes light brown, then add capsicum to it and fry it for 40-50 seconds. Then add turmeric, red chili powder and coriander powder, salt as per taste and fry.

Now take out half the spices from the pot in a bowl. After this, offer a layer of boiled rice on top of the matki masala. After this, add the remaining spices and put another layer of rice. After this, close the mouth of the pot with a vessel and seal it with flour from all sides so that the pulao can be cooked well. Now put the matki on the stove on low flame and let the pulao cook. In about 10 minutes your delicious matka pulao will be ready. It can be served with vegetable or chutney.
