Khasta Kachori Recipe: There is no dearth of shortbread lovers here. Kachori is one of the most liked food items as a street food. There are many types of kachoris available in the market, out of which traditionally moong dal kachori is the most eaten and fed. If you also want to feed crispy shortbread to the guests who come home, then we are going to tell you an easy way to make it. By following some simple steps, you can also eat crispy shortbread like in the market.
Ingredients for Crispy Shortbread
Flour – 1 bowl
Besan – 2 tbsp
Moong dal – 1 bowl
Red chili powder – 1/2 tsp
Whole coriander – 1 tsp
Asafoetida – 1 pinch
Amchur – 1/2 tsp
Cumin – 1 tbsp
Fennel – 1 tbsp
Turmeric – 1/2 tsp
Green coriander chopped – 2 tbsp
Salt – as per taste
Crispy Shortbread Recipe
To make crispy shortbread, soak moong dal in water and keep it aside for 3 hours. After this, grind the lentils by draining the water. While grinding the lentils, keep in mind that the pulse must be coarsely
Have to grind. After grinding the lentils, keep it aside in a vessel, then take flour in a mixing bowl, add some oil and salt and mix it well. Now add water little by little and knead the dough hard. After this, cover the dough with a cotton cloth and keep it.
Take a wok, add oil to it and keep it to heat on medium flame. After the oil is hot, add gram flour, cumin, fennel, red chili powder, turmeric, coriander powder and chopped whole coriander and mix it well. Now after roasting this mixture for 1-2 minutes, add coarsely ground lentils and mix well and cook while stirring.
After roasting the spices for some time, add amchur and salt to it. Now your masala for kachori is ready. Prepare balls of equal proportion of the stuffing from this spice. Now take the dough, take the pre-kneaded dough and knead it once again by applying a little oil. Now make equal balls of dough. Now take a ball and flatten it by pressing it with the palms, then shape it like a bowl. Now place the spice ball in it and close it like a bundle and take out the extra flour.
Now make the dough round first, then keep it on the palm and flatten it by pressing a little and make it thin by pressing the edges. Now roll it into small poori shape. Similarly make kachoris from all the balls. Now when the oil starts to boil in the pan, put the kachoris in it and deep fry it, turning it over and over, until the kachoris are golden from both the sides. Similarly deep fry all the kachoris. Your delicious crispy kachoris are ready. They can be served with tomato ketchup or green chutney.
